Healthy Slow Cooking

Face it, no amount of New Year’s Resolution or new gym memberships or new running shoes are going to get you the weight loss you’re looking for unless you eat less.

But no one wants to live on raw vegetables and smoothies for the next six months. With these healthy recipes, you don’t have to. You can impress your friends and feed your family all while holding down the calories for everyone. Try these tasty recipes in your slow cooker:

 

Red Bean, Chicken & Sweet Potato Stew

At only 336 calories per serving this can’t miss. It’s tasty and kid-friendly. And the secret ingredient of peanut butter gives it a thick and creamy consistency.

What you’ll need:

2 15 ounce can no-salt-added red beans, rinsed and drained

4 cups peeled, cubed sweet potatoes (about 1 pound)

8 ounces boneless chicken breasts cut into bite-size pieces

8 ounces boneless chicken thighs cut into bite-size pieces

2 14 ½ ounce can reduced-sodium chicken broth

2 ½ cups chopped green sweet peppers (2 large)

1 14 ½ ounce can no-salt-added diced tomatoes, undrained

1 10 ounce can tomatoes and chopped green chiles, undrained

1 tablespoon Cajun seasoning

2 cloves garlic, minced

¼ cup creamy peanut butter

Snipped fresh cilantro

Chopped peanuts (optional)

Combine the beans, sweet potatoes, chicken, broth, sweet peppers, diced tomatoes, tomatoes and green chiles in your slow cooker. Add the Cajun seasoning and garlic. Cover and cook on low heat for 10 to 12 hours. Or you can cook on high for 5 to 6 hours. After the desired cooking time, remove 1 cup of hot liquid from the slow cooker. Whisk in the peanut butter and stir this mixture into the cooker. Top with cilantro to serve. If desired, top with the chopped peanuts.

This recipe makes six servings and takes about 20 minutes to prepare before cooking time.

 

Chicken Noodle Soup

You don’t have to have a cold to enjoy some delicious creamy chicken noodle soup. At only 170 calories there’s no need to feel guilty about having a second bowl.

Here’s what you’ll need:

1 32 ounce container reduced-sodium chicken broth

3 cups water

2 ½ cups chopped cooked chicken (about 12 ounces)

1 ½ cups sliced carrots (3 medium)

1 ½ cups sliced celery (3 stalks)

1 ½ cups mushrooms, sliced (4 ounces)

¼ cup chopped onion

1 ½ teaspoons dried thyme, crushed

¾ teaspoon garlic pepper

3 ounces reduced-fat cream cheese, cut up

2 cups dried egg noodles

Combine the chicken broth, water, chicken, carrots, celery, mushrooms, onion, time and garlic pepper in your slow cooker. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. If you choose the low setting turn the cooker to high prior to the last step. Stir in cream cheese until combined. Stir in the uncooked noodles. Cook on high for another 20 to 30 minutes or until the noodles are tender.

This makes about 8 servings and takes 25 minutes to prepare before cooking.

 

Noodle and Cheese Casserole

Reduced fat ingredients make this tasty, 300 calorie per serving casserole a great treat.

Here’s what you’ll need:

2 ½ cups water

1 10 ¾ ounce can reduced-fat and reduced-sodium condensed cream of mushroom soup

1 14 ½ ounce can no-salt-added diced tomatoes, undrained

1 cup sliced celery (2 stalks)

1 cup sliced carrots (2 medium)

1 cup chopped onion (1 large)

1 ½ teaspoons dried Italian seasoning, crushed

2 cloves garlic, minced

¼ teaspoon salt

¼ teaspoon ground black pepper

8 ounces dried extra-wide noodles

1 16 ounce package extra-firm tofu (fresh bean curd), drained, if necessary, and cubed*

½ cup shredded reduced-fat cheddar cheese (2 ounces)

Whisk together the water and cream of mushroom soup in your slow cooker. Stir in tomatoes, carrots, celery, onion, garlic, salt, pepper and Italian seasoning. Cover and cook on low for 7 to 8 hours or on high for 3 ½ to 4 hours. Before serving turn to high setting. Stir in uncooked noodles. Cover and cook until the noodles are tender, about another 20 to 30 minutes. About halfway through cooking stir in tofu cubes. Sprinkle with cheese and let stand until the cheese is melted.

This recipe makes 6 servings and takes about 25 minutes to prepare before cooking.
